Lactococcus lactis is nonmotile and does not create spores. They have homofermentative metabolism and produce L-(+)- exclusively. This bacterium easily inoculates into milk and colonize the mouth and intestines. However, it differs from other lactic acid bacteria on the grounds of its pH levels, temperature tolerances, salt, and growth. Lactococcus lactis is believed to be an immuno-modulator.
