Fenugreek is an annual plant cultivated worldwide. It belongs to the Fabaceae family. Fenugreek seeds contain the molecule sotolone, which imparts the aroma of fenugreek. Its seeds are used as spice blends, as a flavouring agent, and in traditional medicine. It is a rich source of protein, vitamins A, B, and D, biotin, dietary fibre, and minerals, specifically manganese and iron. The main phytochemicals in fenugreek seeds are flavonoids, alkaloids, coumarins, choline, inositol, and saponins. The prevalent alkaloid is trigonelline.
